About the Chefs Gresham Fernandes is the executive chef, Fine Dine of Impresario Hospitality, the company owning restaurants such as Salt Water Café in Mumbai, Smoke House Room and Smoke House Deli in Delhi and Stone Water Grill in Pune. After a short stint at Copenhagen’s celebrated restaurant Noma, Fernandes is now back in Mumbai and continues to helm the kitchens at Salt Water Café. Kelvin Cheung is a Chinese-Canadian chef who was associated with Mumbai’s top restaurant Ellipsis before moving back to Toronto and Chicago. After launching One Street Over soon after coming back to India, Chef Kelvin is now a consultant at the seafood restaurant Bastian, in Mumbai. Zorawar Kalra is one of the youngest restaurateurs of India. He has recently been recognized amongst the 50 Most Influential Young Indians by GQ India. He was awarded the title of 'Restaurateur of the Year Award, 2014’, at HT Crystals, in 2014 and ‘Entrepreneur of the Year in Service Business – F&B Services’, at Entrepreneur India Awards in 2014. Sabyasachi Gorai, popularly known as Chef Saby, owns and runs a boutique consultancy company called Fabrica by Chef Saby in New Delhi. In his two-decade career, beginning at Hotel Guest line, Mumbai, he became the executive chef of one of South East Asia’s largest entertainment centres, The Bowling Company, Mumbai, in 1999. Chef Saby received the ‘Best Chef of India’ award by the then President of India, Pratibha Patil, during the National Tourism Awards 2011–12. Pooja Dhingra is an Indian pastry chef and businesswoman. She is the founder of macaron bakery chain Le15 Patisserie and Studio Fifteen Culinary Centre in Mumbai. Pooja was on Forbes India’s prestigious ‘30 under 30 list’ in 2014, and has been voted a Rising Star by GC Watches and featured in its global campaign. She published her first cookbook, The Big Book of Treats, in 2014.
